Okra Puerto Rican Evergreen

‘Puerto Rico Evergreen’ pods are mainly green, with some red-blushed pods. This okra pod is classified as “smooth/velvety/spiny,” meaning the cultivar displayed some smooth pods, some velvety pods, and some spiny pods. This plant does best in the summer months, producing an abundance of food in the hot, dry climate. Growth from flower to edible pod takes but days, which means you can expect to harvest every other day. The plants tend to grow vertically and can get up to 6 feet tall, but if you top it early in the season, you can expect to see productive side shoots as well. Okra can be prepared fresh, boiled, fried, canned and pickled. Use in salad, stir-fries, gumbo. Outstanding tempura-style or fried with cornmeal. Any blush color on these pods will be lost when cooked or pickled.
